Steak Diane - cooking recipe

Ingredients
    2 top sirloin steaks (1/2-inch thick)
    salt
    2 Tbsp. butter (1/4 stick)
    2 small shallots, minced
    1/4 c. dry sherry
    2 tsp. brandy, slightly warmed
Preparation
    On cutting board, pound steaks until about 1/4-inch thick. Sprinkle lightly with salt.
    In 10-inch skillet over medium-high heat, in hot butter, cook steaks until browned, turning steaks once.
    Stir in shallots and cook, stirring until tender.
    Add sherry and heat.
    Pour brandy over steaks.
    With a match, set aflame; turn steaks once or twice until flaming stops.
    Serve immediately.
