Tasty Smelt - cooking recipe

Ingredients
    2 lb. dressed smelts
    salt and pepper
    1 Tbsp. lemon juice
    cream or milk
    cornmeal
    2 Tbsp. butter or margarine
Preparation
    Rinse cleaned smelts thoroughly; wipe dry.
    Season the smelts with salt, pepper and lemon juice.
    Cover; allow them to stand for 15 minutes.
    Dip the smelts in cream or milk, then roll them in cornmeal.
    Fry the smelts gently in butter, until the fish flakes easily when tested with a fork.
    Place the cooked smelts on a platter.
