Chicken With Cashews, Mushrooms And Bean Sprouts - cooking recipe

Ingredients
    6 dried shiitake mushrooms
    3 Tbsp. soy sauce
    2 Tbsp. dry sherry
    1 tsp. sugar
    1 lb. skinless, boneless chicken breast, cut crosswise into 1/2-inch strips
    3 Tbsp. vegetable oil
    1 c. cashews
    4 scallions, sliced
    1/4 lb. fresh mushrooms, sliced
    1 garlic clove, minced
    1/2 c. fresh bean sprouts
    1/2 c. chicken broth
    2 tsp. cornstarch
Preparation
    Place shiitakes in a heatproof bowl.
    Add boiling water to cover and soak 20 minutes.
    Remove mushrooms and squeeze dry.
    Cut off and discard stems; slice caps.
    In a medium bowl, combine soy sauce, sherry and sugar.
    Add chicken and toss to coat.
    Set aside.
