Sweet Potato Pudding - cooking recipe

Ingredients
    4 c. grated raw sweet potatoes
    1/2 tsp. ground ginger
    1/2 tsp. cloves
    2 c. firmly packed brown sugar
    2 tsp. grated lemon peel
    1 tsp. cinnamon
    1 tsp. salt
    4 eggs, well beaten
    1 c. chopped pecans for topping
Preparation
    Preheat oven top 350\u00b0.
    Combine all ingredients, except eggs and pecans, until well mixed.
    Add eggs and stir until well combined; pour into a 3-quart casserole dish.
    Top with pecans. Bake 1 hour.
    Makes 10 servings, about 480 calories each.
