Mary'S Pot Roast And Veggie Gravy - cooking recipe

Ingredients
    3 lb. roast
    2 Tbsp. oil
    1 medium onion, quartered
    2 to 3 carrots, cut in pieces
    2 to 3 garlic cloves, minced
    3 celery ribs, cut in pieces
    1 large or 2 medium tomatoes, quartered
    1 medium bell pepper, diced
Preparation
    Sear roast in oil in Dutch oven. Add remaining ingredients but do not add any water. Seal top of Dutch oven by covering completely with foil and then covering with lid. Cook in a 350\u00b0 oven about 3 hours. Do not open during cooking as it would allow the sealed juices and steam to escape. You do not want to lose any of the flavor. Also, it is easy to get burned. Let cool until lid can be safely removed.
