Roasted Honey Pepper Pack - cooking recipe

Ingredients
    1 boneless pack loin roast (2 1/2 lb.)
    1/4 c. honey
    2 Tbsp. Dijon mustard
    2 Tbsp. crushed mixed peppercorns
    1/2 tsp. thyme, crushed
    1/2 tsp. salt
    fresh thyme and cranberries (garnish)
Preparation
    Carefully score roast 1/2-inch deep completely around roast without cutting string. Combine all remaining ingredients.
    Mix well. Spoon or brush 2/3 of the honey mixture over pack to coat. Roast at 325\u00b0 for 1 hour. Brush with remaining honey mixture and cook 30 minutes more or until thermometer registers 160\u00b0. Serves 8.
