Red Beans And Rice - cooking recipe
Ingredients

1 lb. dried red kidney beans
1 meaty ham bone or ham hocks
2 large onions, coarsely chopped
4 cloves garlic, minced
1 stick butter
4 chicken bouillon cubes
2 bay leaves
1 lb. smoked sausage
red pepper
black pepper
salt
Tabasco
rice
Preparation

Soak beans in water overnight.
Drain.
In large pot, melt butter and saute onion and garlic.
Add ham bone, (I find it best to always add extra ham), dried beans and cover with water.
Add bouillon cubes, pepper and Tabasco.
Simmer slowly for approximately 2 hours or until beans are tender.
During last 30 minutes of cooking, add sausage and salt.
Adjust seasoning to taste.
Serve over cooked rice with extra Tabasco sauce on side and crusty French bread.
Serves 8.
