Breakfast In A Cup - cooking recipe

Ingredients
    3 c. cooked rice
    1 (4 oz.) can diced green chilies
    1 (2 oz.) jar diced pimentos, drained
    2 eggs, beaten
    1/2 tsp. salt
    vegetable cooking spray
    1 c. shredded Cheddar cheese, divided
    1/3 c. skim milk
    1/2 tsp. ground cumin
    1/2 tsp. ground black pepper
Preparation
    Combine rice, 1/2 cup cheese, chilies, pimentos, milk, eggs, cumin, salt and pepper in a large bowl.
    Divide the mixture evenly into 12 muffin cups coated with cooking spray.
    Sprinkle with remaining 1/2 cup of cheese.
    Bake at 400\u00b0 for 15 minutes or until set.
    Great for brunch or lunch.
    May be placed in a Ziploc bag, taken out as needed and microwaved to warm.
