Nova Scotian Plum Loaf - cooking recipe

Ingredients
    1 1/2 c. boiling water
    1 c. mashed potatoes
    1 c. brown sugar
    1 c. honey
    2 packets dry active yeast
    2 c. scalded milk
    1/2 c. shortening
    3 c. rye flour (for sponge)
    4 c. unbleached white flour (for sponge)
    2 tsp. salt
    1 tsp. nutmeg
    1 tsp. baking soda
    2 tsp. cinnamon
    1 lb. raisins
    1/2 c. chopped walnuts
    3 c. unbleached white flour
Preparation
    Combine boiling water, mashed potatoes and brown sugar.
    Proof yeast and add to cooled potato mixture.
    Add scalded milk, shortening and honey.
    Add the amount of flours needed to make a sponge.
    Let rise for 30 minutes.
    Add salt, soda, nutmeg, cinnamon, raisins and nuts.
    Knead.
    Let rise until doubled (1 hour).
    Divide into 4.
    Roll out each loaf and sprinkle with a cinnamon/sugar mixture.
    Roll up into loaves.
    (Optional and recommended:
    Let rise again.)
    Bake for 65 minutes at 350\u00b0. Makes 4 loaves.
