Cheesecake Cupcakes - cooking recipe

Ingredients
    2 (8 oz.) pkg. cream cheese
    2 eggs
    1/2 c. sugar
    1 tsp. vanilla
    vanilla wafers
    canned pie filling*
Preparation
    Preheat oven to 350\u00b0.
    In
    electric
    mixer,
    beat
    cream cheese, eggs, sugar and vanilla
    until light and fluffy.
    Place 1 cookie in each of 18 foil
    baking cups on cookie sheet.
    Pour cream cheese mixture into cups, filling about 1/2 way.
    Bake at 350\u00b0 for 15 to 18 minutes.\tCool
    thoroughly.
    Top with desired fruit (*canned cherry, blueberry,
    pineapple
    or strawberry pie filling).
    Refrigerate.
    Makes 18 individual cupcakes.
