Potato Croquettes - cooking recipe

Ingredients
    3 lb. potatoes (8 medium), pared and cubed
    1 1/4 tsp. salt, divided
    1/2 c. hot milk
    1/4 c. butter or margarine
    1/8 tsp. pepper
    3 eggs
    2 Tbsp. finely chopped onion
    2 1/2 c. fresh bread crumbs
    1/2 c. vegetable oil
Preparation
    Place potatoes in large saucepan.
    Add water to cover and 1 teaspoon of the salt.
    Cover and cook over medium-high heat until water comes to a boil.
    Reduce heat to low and simmer about 20 minutes or until potatoes are fork-tender; drain.
    Place in large bowl.
    Add milk, butter, pepper and remaining 1/4 teaspoon salt; beat or mash until smooth.
    Stir in 1 of the eggs and onion. Cover and chill at least 2 hours.
    Divide mixture into 12 equal pieces.
    With floured hands, shape each piece into a log.
