Lemon Curd - cooking recipe

Ingredients
    4 lemons, juiced
    4 large eggs, beaten
    1/2 c. butter
    2 c. sugar
    2 Tbsp. finely grated lemon zest
Preparation
    Combine ingredients in the top of a double boiler. Stir over the simmering water until sugar is dissolved. Continue cooking and stirring until curd thickens. If desired, strain out lemon rind before serving. Serve on shortbread, toast, ice cream, muffins, cakes. Store refrigerated.
