Lone Star Caviar - cooking recipe
Ingredients

1 lb. dried black-eyed peas
2 c. Italian salad dressing
2 c. diced green peppers
1 1/2 c. diced onion
1 c. chopped green onions
1/2 c. chopped jalapeno pepper
3 oz. diced pimento
1 Tbsp. chopped garlic
salt and pepper to taste
Preparation

Soak peas in enough water to cover for 6 hours.
Drain well. Place peas in saucepan and cover with water.
Bring to boil over high heat.
Reduce heat and boil for 45 minutes.
Blend in dressing and let cool.
Add remaining ingredients and mix well. Serve as a salad.
