Uncooked Tomato Relish - cooking recipe

Ingredients
    1/4 bushel firm red tomatoes, chopped (about 12 c.)
    1/2 c. kosher salt
    2 c. diced fresh celery
    2 green peppers, seeded and chopped
    1 large onion, chopped
    2 c. sugar
    4 c. cider vinegar
    4 Tbsp. mustard seed
    1/2 c. salt
Preparation
    Sprinkle chopped tomatoes with kosher salt and let stand overnight.
    Drain thoroughly.
    Add all other ingredients.
    Ladle into jars and cap.
    Must be refrigerated.
    Makes 7 to 8 pints.
