Ingredients

10 1/2 oz. can mandarin oranges
2 Tbsp. sugar
1 tsp. unflavored gelatin
1/4 c. orange juice
8 oz. nonfat sugar-free orange or lemon yogurt
1 tsp. vanilla
1 egg white
Preparation

Drain oranges.
In a small saucepan, combine sugar and gelatin.
Stir in orange juice.
Heat and stir until sugar and gelatin are dissolved.
Remove from heat and cool slightly.
Place oranges, gelatin mixture, yogurt and vanilla in a blender.
Cover and blend until smooth.
In a mixing bowl, beat egg white until stiff peaks form.
Fold into yogurt mixture, then transfer to an 8 x 4 x 2-inch loaf dish.
Cover and freeze 3 to 24 hours or until firm.
Serve in dessert dishes.
Makes 5 servings.
