Raisin And Carrot Salad - cooking recipe

Ingredients
    1 c. water
    1/4 tsp. salt
    6 medium carrots, julienned
    2 Tbsp. margarine
    2 Tbsp. sugar
    mint leaves for garnish
Preparation
    Bring water and salt to a boil in a medium pan.
    Add carrots and cook until tender, but still a little firm.
    Drain and set aside.
    Melt margarine in saucepan.
    Stir in sugar.
    Add raisins and boil for 1 minute.
    Return carrots to pan and cook for 2 minutes.
    Stir often until carrots are tender.
    Garnish with mint leaves.
    Serves 4.
