Stir-Fried Oriental Vegetables With Chicken - cooking recipe

Ingredients
    1 (16 oz.) pkg. Oriental vegetables
    1 whole chicken breast, boned, skinned and cut in bite-sized pieces
    1/4 c. soy sauce
    1 Tbsp. cooking sherry
    1 Tbsp. cornstarch
    2 tsp. sugar
    1/2 tsp. salt
    4 Tbsp. peanut oil
Preparation
    Combine soy sauce, sherry (or vinegar), cornstarch, sugar and salt in bowl.
    Add chicken and marinate 10 to 15 minutes.
    In 2 tablespoons oil, stir-fry vegetables 8 to 10 minutes.
    Remove. Add 2 tablespoons oil and chicken, discarding marinade.
    Stir-fry 3 to 5 minutes.
    Add vegetables and stir-fry an additional 1 to 2 minutes.
    Serve over rice.
    Serves 4.
