Summer Squash Casserole - cooking recipe
Ingredients

2 lb. summer squash, sliced
1 c. shredded carrots
1/4 c. chopped onion
1 c. sour cream
1 can cream of chicken soup
1 (8 oz.) pkg. herbed stuffing mix (not cubes)
1/4 c. melted margarine
Preparation

Boil squash and onion for 5 minutes.
Add carrots, sour cream and soup to squash and onion mixture.
Set aside.
Mix margarine and stuffing.
Spread 1/2 of stuffing mix in bottom of 13 x 9-inch pan.
Put squash mixture on top of stuffing.
Sprinkle rest of stuffing mixture on top.
Cover and bake for 25 minutes at 350\u00b0. Remove cover to brown for the last 5 minutes.
