Chicken Margarita Salad - cooking recipe

Ingredients
    2 (6 oz.) boneless chicken breasts
    1 c. pineapple juice
    1/4 c. brown sugar
    2 Tbsp. soy sauce
Preparation
    Marinate chicken at least 2 hours in pineapple juice, brown sugar and soy sauce mixture.
    Place chicken on grill and cook for 8 minutes on each side.
    Brush with marinade.
    Cut chicken into bite-size pieces and brush with Margarita Butter.
    Serve chicken on mixed greens, topped with shredded Co-Jack cheese, tomato wedges, croutons and choice of dressing.
    Serves 2.
