Zucchini Casserole - cooking recipe

Ingredients
    4 c. zucchini chunks
    1/2 medium onion, sliced
    2 carrots, shredded
    green pepper to taste
    pimento to taste
    1 can cream of chicken soup
    1/2 c. sour cream or yogurt
    1/2 pkg. Pepperidge Farm stuffing
Preparation
    Cook zucchini to maintain crispness and drain.
    Saute onion. Mix all ingredients together.
    Place in 9 x 13-inch casserole dish or a 2-quart casserole dish.
    Bake at 350\u00b0 for 25 minutes.
    Serves 8.
