Ingredients

2 c. sifted cake flour
1 Tbsp. sugar
4 Tbsp. baking powder
1/2 tsp.s alt
3 eggs, separated
1 1/2 c. milk
1/2 c. butter, melted
Preparation

Sift flour, sugar, baking powder and salt together.
Beat egg yolks.
Stir in milk and melted butter.
Add liquids to dry ingredients and beat until smooth.
Beat egg whites until stiff and fold into batter.
Use about 1/2 cup for a round waffle pan. Makes great light waffles.
