Al Hirt'S Stuffed Mushrooms - cooking recipe

Ingredients
    24 large mushrooms
    1/2 c. butter or margarine
    1 envelope onion soup mix
    3/4 c. dry bread crumbs
    1/2 c. sherry
    1 Tbsp. butter
    1/2 c. Parmesan cheese
    parsley sprigs
Preparation
    Remove stems from mushrooms and chop, reserving whole caps. In a large skillet, melt 1/2 cup butter and add chopped mushroom stems; cook until tender.
    Remove pan from heat; add onion soup mix, bread crumbs and sherry.
    Mix well.
    Fill the mushroom caps with the mixture, mounding it high.
    Brush 2 tablespoons butter and sprinkle the mushroom caps with Parmesan cheese.
    Place on a greased cookie sheet and broil for 5 minutes.
    Serve on a platter garnished with parsley (optional).
