Salmon Filet, Marinated In Red Wine - cooking recipe

Ingredients
    2/3 to 3/4 lb. filet of salmon
    1/2 c. dry red wine
    1/2 onion, sliced
    1 carrot, sliced
    1 Tbsp. juniper berries
    pat of butter, melted
    cooking oil
    lemon wedges
Preparation
    Place salmon filet in marinating dish and spread onion, carrot and juniper berries around fish.
    Season fish with salt and pepper.
    Add wine; cover and refrigerate for 2 to 4 hours. Brush cooking surface with
    oil.
    Heat
    oven
    to 350\u00b0.
    Remove fish from marinade and place, skin side down, on oven grill or in shallow pan.
    Brush
    fish lightly with melted butter.
    Bake for
    about 10 minutes,
    or
    until
    fish
    flakes
    when
    tested. Remove fish and cooking
    surface from oven, and carefully peel flesh away from skin.
    Serve with lemon wedges.
    Yields 2 to 3 servings.
