Golden Glow Gelatin Salad - cooking recipe
Ingredients

2 c. raw carrots
15 oz. can crushed pineapple
7/8 oz. pineapple juice
7/8 c. water
1/2 tsp. salt
1 pkg. sugar free lemon jello
1/2 c. chopped pecans
Preparation

Grate or grind carrots; drain pineapple, reserving juice.
Heat to boiling juice, water and salt.
Dissolve jello in hot liquid. When jello is about to set, combine with carrots, pineapple and 1/2 cup chopped pecans.
Place in wet mold and chill until firm.
Makes 9 servings in a square pan or fewer in individual molds.
