Roasted Vegetables - cooking recipe

Ingredients
    2 yellow squash, cut into chunks
    2 zucchini, cut into chunks
    1 purple onion, quartered
    1 small eggplant (unpeeled), cut into chunks
    1 sweet red pepper, quartered
    1/3 c. butter or margarine
    2 to 3 tsp. dry Italian seasoning
    1/2 tsp. pepper
Preparation
    Place all vegetables on a lightly greased piece of aluminum foil.
    Dot with butter and sprinkle with spices.
    Fold aluminum into secure packet.
    Cook on grill 20 to 30 minutes or until vegetables are tender.
