Italian Scalloped Potatoes - cooking recipe

Ingredients
    1 Tbsp. instant minced onion
    4 c. (two 1 lb. cans) tomatoes
    1/3 c. chopped parsley
    salt and pepper to taste
    6 c. thinly sliced, peeled potatoes
    bread crumbs
    grated Parmesan cheese
Preparation
    Mix first 5 ingredients.
    Mash with fork so the tomatoes break apart.
    Put a layer of potatoes in buttered large decorative casserole.
    Cover with a few spoonfuls of tomato mixture.
    Repeat layers until all ingredients are used and casserole is full. Sprinkle lightly with bread crumbs and Parmesan. Bake, covered, in preheated 350\u00b0 oven for 45 minutes.
    Uncover and cook until potatoes are tender.
    Makes 12 servings.
