Scampi Primavera - cooking recipe

Ingredients
    1/3 to 1/2 c. light virgin olive oil
    2 Tbsp. minced garlic
    1/2 tsp. minced lemon peel
    2 carrots, cut in 2-inch thin strips
    1 medium zucchini, cut into 2-inch thin strips
    1 medium red pepper, cut into thin strips
    1 1/2 lb. medium shrimp, peeled and cleaned
    2 Tbsp. lemon juice
    1/2 tsp. salt
    1/8 tsp. pepper
    2 Tbsp. minced, fresh basil
    2 Tbsp. minced, fresh parsley
    16 oz. spaghetti, cooked
Preparation
    Heat oil in skillet.
    Cook and stir garlic and lemon peel 30 seconds.
    Add vegetables and shrimp and cook about 4 minutes over medium heat or until shrimp turn pink.
    Sprinkle with salt, pepper, lemon juice, basil and parsley; stir well.
    Spoon over hot, cooked spaghetti and toss.
    Sprinkle with grated Parmesan cheese, if desired.
    Yields 6 to 8 servings.
