Meatless Spaghetti Sauce - cooking recipe

Ingredients
    2 large onions
    1 sweet green pepper
    4 tsp. olive oil
    dash of cinnamon
    1 qt. tomatoes or 1 (No. 2) can and 1 can water
    salt, pepper, oregano, basil, etc., to taste (2 to 3 tsp.)
    3 ribs celery
    1 eggplant
    1/2 tsp. brown sugar
    1 can tomato paste
    1 can water for paste
Preparation
    Chop onions, celery, green pepper and eggplant together in food processor.
    Saute in large pan, using oil.
    Add brown sugar, cinnamon, tomatoes, tomato paste, water and seasonings to taste. Simmer for 2 to 3 hours.
    Best made a day ahead.
