Kari-Kare(Meat And Vegetable Stew In Peanut Sauce) - cooking recipe

Ingredients
    2 1/2 lb. oxtail, cut into 2-inch lengths
    1 1/2 tsp. salt
    2 Tbsp. cooking oil
    3 cloves garlic, minced
    1 medium onion, sliced
    1/2 c. achuete water
    3 Tbsp. peanut butter
    2 Tbsp. Mochiko
    1/2 lb. green beans
    1 medium eggplant, cut into 8 pieces
Preparation
    Place oxtail pieces in large pot; add enough water to cover. Bring to a boil; lower heat and simmer for 1 1/2 hours or until tender.
