Spring Holiday Pork Roast - cooking recipe

Ingredients
    4 to 5 lb. boneless pork loin roast (double loin), rolled and tied
    1 jar (12 oz.) apricot preserves
    1/4 c. light corn syrup
    3 Tbsp. cider vinegar
    1/2 tsp. dry mustard
Preparation
    Place roast rack in shallow roasting pan.
    Insert meat thermometer so bulb is in center of thickest part of roast. Roast uncovered in a 325\u00b0 oven for 2 to 2 1/2 hours or until meat thermometer registers 160\u00b0.
