Eggplant With Mozzarella Cheese - cooking recipe

Ingredients
    3 lb. eggplant
    salt
    olive oil
    2 onions, chopped
    1 clove garlic, crushed
    2 lb. tomatoes, chopped
    thyme and oregano to taste
    1/2 c. grated Parmesan cheese
    1 lb. Mozzarella cheese
Preparation
    Slice the eggplant and sprinkle with salt.
    Set aside for about 1 hour.
    Drain and pat dry.
    Saute in olive oil; drain and place in baking dish.
    Saute the onions and garlic in olive oil for 2 minutes.
    Add tomatoes, thyme and oregano; simmer for 1/2 hour.
    Pour tomato sauce over the eggplant; sprinkle with Parmesan cheese.
    Slice the Mozzarella and arrange slices on top.
    Dot with butter or margarine.
    Bake in a 325\u00b0 oven for 1 hour.
    Serves 6.
