Vegetable Potpourri(8 Servings) - cooking recipe

Ingredients
    2 c. celery, cut up
    1/2 lb. carrots, cut up
    1/2 c. onion, cut up
    1 c. green beans, drained
    4 Tbsp. butter
    2 c. whole tomatoes
    3 Tbsp. Minute tapioca
    1 can mushrooms
    2 tsp. salt
    1/2 tsp. pepper
Preparation
    Melt butter in a saucepan.
    Stir in celery, carrots, onion and green beans; cook for 5 to 10 minutes.
    Combine with remaining ingredients in a casserole dish.
    Add a small amount of tomato juice if the mixture appears dry.
    Bake at 350\u00b0 for 2 hours.
