Dried Black-Eyed Pea Croquettes - cooking recipe

Ingredients
    2 c. leftover peas, mashed
    1/2 c. finely chopped onion
    1 egg, well beaten
    1/2 c. self-rising flour
    salt and pepper to taste
Preparation
    Beat all ingredients together well.
    Heat 1/2 inch of fat in skillet.
    Drop by spoonfuls and fry until browned on both sides. Drain on paper towels or brown paper.
    If mix is too dry, add pea juice or milk.
