Marinated Beef Or Venison(Sauerbraten) - cooking recipe

Ingredients
    4 lb. roast
    2 c. vinegar
    2 c. water
    1 large onion, sliced
    1/4 c. sugar
    2 tsp. salt
    10 peppercorns
    3 whole cloves
    2 bay leaves
    1 lemon, sliced 1/4-inch thick
Preparation
    Place roast into a large 3 to 4- quart bowl; set aside. Combine in saucepan and heat to boiling the vinegar, water and spices.
    Pour hot mixture over meat; allow to cool.
    Add lemon. Cover and set in refrigerator.
    Marinate for 4 days, turning meat once each day.
    Remove meat from marinade; drain thoroughly. Strain and reserve marinade.
