Sweet And Sour Chicken - cooking recipe

Ingredients
    1 (15 1/2 oz.) can unsweetened pineapple chunks, undrained
    1/4 c. firmly packed brown sugar
    1 Tbsp. cornstarch
    1/4 tsp. salt
    1/4 c. vinegar
    3 Tbsp. low sodium soy sauce
    3 c. diced cooked chicken breast, skinned before cooking and cooked without salt
    1/2 c. diagonally sliced celery
    1/2 c. chopped green pepper
    1/3 c. sliced onion
    2 Tbsp. diced pimento
    2 1/2 c. hot cooked rice, cooked without salt or fat
Preparation
    Drain pineapple, reserving juice.
    Set pineapple chunks aside. Combine brown sugar, cornstarch and salt in a large saucepan. Add pineapple juice, vinegar and soy sauce, stirring until well blended.
    Bring to a boil over high heat, stirring constantly. Reduce heat to medium and cook until mixture thickens.
    Remove form heat and add chicken, pineapple chunks, celery, green pepper and onion.
    Continue to cook over medium heat 5 minutes, stirring constantly.
    Add pimiento and cook 1 additional minute.
    Serve chicken mixture over rice.
    Yields 5 servings.
    Serving size: 3/4 cup chicken mixture with 1/2 cup rice.
