Eggplant Casserole - cooking recipe

Ingredients
    1 large eggplant
    1 large onion, chopped
    1 large bell pepper, chopped
    2 c. cooked rice
    1 lb. ground turkey, cooked and drained
    1/4 c. soy sauce
    1 1/2 Tbsp. garlic powder
Preparation
    Boil eggplant 10 minutes; cool, peel and chop eggplant.
    In a large skillet saute onion, bell pepper and eggplant 15 minutes, then fold in meat, rice and spices.
    Spray a 1 1/2-quart baking dish, put the mixture in dish.
    Dot with margarine.
    Bake in 400\u00b0 oven for 20 minutes.
