Eggplant Sauté - cooking recipe

Ingredients
    2 large eggplant, diced
    2 red peppers, chopped coarsely
    2 green peppers, chopped coarsely
    3 tomatoes, chopped
    6 cloves garlic, chopped not too fine
    2 onions, chopped, chopped coarsely
    3 Tbsp. oil
    salt and pepper
    1 c. chopped parsley
Preparation
    With oil in a deep saute pan with medium heat, saute onions and garlic until onions are just translucent. Add bell peppers and stir. Cook for 2 minutes. Add tomatoes and cook 2 more minutes. Add eggplant and continue cooking 2 to 3 more minutes. Add parsley and continue cooking until all vegetables are cooked. Season with salt and pepper to taste. Serves 6.
