Pan-Fried Fish Filets - cooking recipe

Ingredients
    8 fish filets (firm flesh)
    4 Tbsp. butter
    2 Tbsp. oil
    1/4 c. Parmesan cheese
    2 c. bread crumbs
    salt and pepper to taste
    2 eggs
    1 Tbsp. oil
    4 Tbsp. butter
    1 1/2 lemons, squeezed
Preparation
    Melt butter
    and oil in pan.
    Mix bread crumbs, cheese, salt and pepper; blend.
    Mix oil and eggs together.
    First dip fish in flour, then in egg mixture; drain and coat with bread crumbs.
    Fry in hot butter and oil for 3 to 5 minutes.
    Melt 4 tablespoons butter
    in
    frying pan; add lemon juice, mix, then serve over filets.
