Homemade Salami - cooking recipe

Ingredients
    5 lb. ground beef
    5 Tbsp. Tender Quick salt (Morton)
    2 1/2 tsp. mustard seed
    2 tsp. seasoned salt
    1 Tbsp. liquid smoke
    1 1/2 tsp. garlic salt
    2 Tbsp. coarsely ground pepper
    1 Tbsp. peppercorns
Preparation
    Mix well.
    Refrigerate 24 hours, kneading 3 times during the 24 hours.
    Form into 4 rolls (12 x 2-inches).
    Place on broiler pan.
    Bake at 150\u00b0 for 8 hours, turning 3 times.
    Salami will form its own casing.
    Keeps in refrigerator several weeks and may be frozen for 3 months.
