Black Truffle Frittata - cooking recipe

Ingredients
    6 eggs
    2 large baking potatoes, boiled, peeled and sliced
    1 medium-size black truffle, diced
    1 slice (3 oz./90 g) cooked Prosciutto, diced
    2 Tbsp. extra virgin olive oil
    additional black truffle, thinly sliced (optional)
    salt and freshly ground pepper
Preparation
    Beat the eggs with a little salt and pepper in a bowl.
    Stir in potatoes, truffle and Prosciutto.
