Meatballs And Rice - cooking recipe

Ingredients
    1 large onion
    1 large green pepper
    1 rib celery
    2 lb. ground beef
    1 beaten egg
    2 Tbsp. cream
    Worcestershire sauce
    Tabasco sauce (optional)
    pinch of sugar
    salt and pepper
    1 1/2 c. whole tomatoes
    1 Tbsp. roux (optional)
    chopped parsley
    shallots
Preparation
    Chop fine the first 3 ingredients.
    Mix 1/4 of this with meat, rice, eggs, seasonings and cream.
    Shape into balls.
    Roll lightly in flour and a bit of paprika.
    Fry to copper color; add remaining onions to drippings.
    Cook until lightly brown.
    Add tomatoes and water.
    Simmer slowly for about 1 to 1 1/2 hours.
    Add parsley and shallots.
    Cook about 10 more minutes.
