Stuffed Chicken Breasts - cooking recipe

Ingredients
    1 lb. chicken breasts
    1/2 tsp. black pepper
    1/4 tsp. salt
    1 c. cooked brown rice, cooked in chicken broth
    1/4 c. minced tomato
    1/4 c. shredded Mozzarella
    3 Tbsp. rice bran (optional)
    1 Tbsp. fresh basil
Preparation
    Pound chicken to 1/4 inch thickness.
    Season chicken with half of pepper and salt.
    Combine rice, tomato, cheese, bran, basil and remaining pepper.
    Spoon rice mixture on top of chicken breasts; fold over and secure with toothpicks.
    Coat skillet with Pam.
    Cook stuffed chicken breasts 1 minute on each side until brown. Transfer to shallow pan.
    Bake at 350\u00b0 for 10 minutes or until chicken is tender.
