Morning (Or Anytime) Mix-Up - cooking recipe

Ingredients
    2 c. frozen hash browns
    1/2 c. chopped onion
    6 eggs
    1 c. (4 oz.) shredded Cheddar cheese
    1 c. chopped, cooked ham or Spam
    2 Tbsp. cooking oil
    salt and pepper to taste
    minced, fresh chives (optional)
Preparation
    In large skillet, saute potatoes and ham or Spam in oil for 10 minutes or until tender.
    In a small bowl, beat eggs, salt and pepper.
    Add to skillet.
    Cook, stirring occasionally, until eggs are set.
    Remove from heat and gently stir in cheese.
    Spoon onto serving platter and sprinkle with chives or other toppings.
    Makes 4 servings.
