Sweet Potato Salad - cooking recipe

Ingredients
    1 (18 oz.) can sweet potatoes, drained
    1 (8 oz.) can pineapple chunks, drained
    1 c. chopped walnuts
    1 c. pitted dates
    2 c. chopped celery
    1 onion, chopped
    1 c. toasted coconut
    1/2 tsp. salt
    3/4 c. sour cream
    3/4 c. mayonnaise
    1 tsp. curry powder
Preparation
    In a large bowl, combine potatoes, pineapple, nuts, dates, celery and onion. Add 3/4 cup coconut and salt.
    In a small bowl, mix sour cream, mayonnaise and curry powder until well blended. Add 1/2 of mixture to potatoes.
    Toss lightly. Top with remaining dressing and rest of coconut.
