Corn Muffins, Corn Sticks Or Fried Cornmeal Cakes - cooking recipe

1 c. self-rising white meal mix
3 Tbsp. self-rising flour
1 Tbsp. sugar
3/4 to 1 c. cold sweet milk
1 egg (unbeaten)
2 Tbsp. melted shortening
Preparation

Mix meal, flour and sugar.
Add egg and add milk gradually until you get the right consistency (not too thick, not too thin). Add melted shortening last, stirring only enough to mix completely. Fill preheated and greased corn stick tins or muffin tins and bake at 450\u00b0 for 20 to 30 minutes or until golden brown and done.
If frying, melt about 3 tablespoons shortening in skillet and fry with medium-low heat until brown and done.
About 2 tablespoons of mixture to each corn cake.
