Tofu Enchiladas Or Lasagna Filling - cooking recipe

Ingredients
    1 lb. soft tofu (approximately 2 c.)
    1 c. warm, cooked rice (brown)
    1 medium onion, chopped and sauteed in water
    1 Tbsp. tahini (sesame butter) or olive oil
    1 to 1 1/2 tsp. salt
Preparation
    Place all ingredients in food processor and blend until smooth.
    Stuff enchiladas.
    Cover with sauce and bake or use as a lasagna filling in place of Ricotta cheese or stuff large shell noodles, cover with sauce and bake.
