Ingredients

2 c. all-purpose flour
2 Tbsp. sugar
1 tsp. cinnamon
4 tsp. baking powder
1 tsp. salt
2 eggs, separated and whites stiffly beaten
2 c. milk
2 Tbsp. melted butter
1 c. peeled, chopped apples or 1 c. apples
Preparation

Combine dry ingredients.
Mix egg yolks and milk; pour into dry ingredients.
Stir in butter and apples.
Fold in egg whites. Drop by tablespoonfuls on greased griddle.
Makes 12 medium pancakes.
