Eggplant Resno - cooking recipe

Ingredients
    1 medium onion, thinly sliced
    1 medium green pepper, coarsely chopped
    1 1/2 tsp. butter or margarine
    1 medium eggplant, peeled and cut into 3/4-inch cubes
    1 (1 lb.) can tomatoes
    1/2 tsp. salt
    1 tsp. sugar
Preparation
    Saute onion and green pepper in butter until onion is golden. Add eggplant cubes, tomatoes, salt and sugar; cover and simmer 10 minutes or until eggplant is just tender.
    Can sprinkle with cheese.
