Eggplant Casserole - cooking recipe

Ingredients
    1 eggplant, peeled and diced
    2 eggs, beaten
    about 1 c. cracker crumbs (Ritz)
    2 Tbsp. butter
    salt and pepper
    1/2 c. onion
    grated cheese (Cheddar is good)
    Worcestershire sauce
    1 can mushroom soup
Preparation
    Cook eggplant and onion in salted water until tender; drain. Mix ingredients and top with buttered crumbs.
    Bake at 350\u00b0 for 30 minutes.
