Roast Duck - cooking recipe

Ingredients
    1 dressed duck
    1 onion
    1 apple
    salt and pepper
    hot water
    mashed potato and celery
    stuffing
Preparation
    Thoroughly wash the dressed duck.
    Season with salt and pepper inside and out, using 1 teaspoon salt to the pound of duck and pepper to taste.
    Peel, wash and slice onion.
    Core, wash and slice apple.
    Stuff duck with onion and apple slices; truss.
    Place duck on rack in roaster.
    Put 2 cups hot water in bottom of roast pan. Bake at 400\u00b0 for 15 minutes to the pound, covered.
    As duck bakes, baste with hot water to which butter is added.
    The liquid from the duck is strong and should be poured off after duck bakes about 1 hour, then basting is started.
    When done, remove onion and apple.
    Replace with dressing.
    Steam 30 minutes.
